Eyota is a city in Olmsted County in southeastern Minnesota.

Eyota was platted in 1864. The name Eyota is derived from the Sioux Indian word iyotak, meaning "greatest" or "most". A post office has been in operation at Eyota since 1864. The city was incorporated on February 16, 1875.

During the National Bank Note Era Eyota had a population of 404 in 1880, going up and down and then ending at the exact same number in 1930, as of 2010 the population is 1,977.

First National Bank was the only National Bank in Eyota during the National Bank Note Era (1863-1935).
